Crayfish, or crawdads, can be an important part of a trout's diet, but the percentage they make up depends on several factors, such as the size of the trout, the time of year, and the specific body of water.  In crawdad-rich environments, they can be a significant supplemental prey item.  While this food source is available year round, it becomes more key in the fall and winter when aquatic and terrestrial insects are minimal.
